Dill Pickle Potato Salad
This dill pickle potato salad is a twist on your standard potato salad. It's loaded with potatoes, fresh dill, and dill pickles. It's the perfect make-ahead side dish for the summer!

Ingredients
- 3 pounds baby Dutch yellow potatoes
- 1 shallot, thinly sliced
- 1 large dill pickle, chopped
- 1/4 cup chives, finely chopped
- 1/4 cup dill, finely chopped
For the dressing
- 1/3 cup olive oil
- 1 1/2 teaspoon red wine vinegar
- 1/2 lemon, zested
- 2 tablespoons lemon juice
- 2 teaspoons dijon mustard
- 1/4 cup mayonnaise
- Salt, to taste
- Pepper, to taste
Instructions
In a large pot, add the potatoes. Fill the pot with enough water to cover the potatoes. Salt the water generously. Bring to a boil and cook until potatoes are easily pierced with a fork, about 15 minutes. Drain and let cool. Once cooled, cut the potatoes into bite size pieces and set aside.
In a small bowl, whisk together the dressing ingredients.
In a large bowl, combine potatoes, shallot, pickle, chives, dill, and dressing. Toss to combine. Enjoy!
