Burrata with Tomato Confit and Peaches
This burrata with tomato confit and peaches is the PERFECT treat for summer! The flavors work so well together and it’s so easy to make. Enjoy with bread or over arugula.

Ingredients
- 1 pint cherry tomatoes, halved
- 2 cloves garlic, minced
- Olive oil
- Salt, to taste
- Pepper, to taste
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried parsley
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon marjoram
- 1 peach, diced
- Burrata
- Balsamic glaze
- Basil
Instructions
Preheat oven to 400°F.
In a medium baking dish, add the sliced cherry tomatoes and garlic. Drizzle generously with olive oil. Add salt, pepper, oregano, parsley, rosemary, and marjoram. Stir to combine.
Bake for 15 minutes.
Remove from heat. Add peaches. Stir to combine.
Top with burrata. Drizzle with balsamic glaze. Add salt and pepper to taste. Garnish with basil.
