Lemon Chicken Noodle Soup
This Lemon Chicken Noodle Soup features a bright lemony broth that pairs perfectly with tender noodles and savory chicken, making it a perfect meal for these summer days (or any other day of the year!).

Ingredients
- 2 chicken breasts
- Salt
- Pepper
- 1 cup flour
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1 teaspoon crushed red pepper
- 2 1/2 cups water
- 2 teaspoons chicken bouillon
- 1/2 lemon, juiced
- 1 cup whole milk
- 2 servings noodles
- Broccoli florets
- 2 lemon wedges
- Scallions, to garnish
Instructions
Using a meat tenderizer, pound chicken evenly from the center towards the edges until it is about 1/2 inch thick. Pat dry. Season with salt and pepper. Coat with flour.
In a medium saucepan, over medium high heat, add the olive oil. Add chicken. Cook for about 3 minutes per side. Remove from heat. Set aside.
In the same saucepan, add garlic, oregano, paprika, red pepper flakes. Stir until fragrant, about 1 minute.
Add water, chicken bouillon, lemon juice, and milk. Stir to combine. Bring to a simmer.
Place the chicken back into the pan and let cook for 5 minutes.
While the chicken is cooking, cook the broccoli. Cook noodles according to package directions.
Remove chicken and slice.
Divide noodles and broth into two bowls. Top with chicken, broccoli, scallions, and a lemon wedge.
