Cambozola Mac and Cheese
In celebration of National Moldy Cheese Day, I whipped up a delicious Cambozola Mac and Cheese. Cambozola is one of my all-time favorite cheeses. The sharpness of the cambozola adds a unique, tasty twist to classic mac and cheese, balancing the richness of the sauce with a deep, savory flavor. Perfect for any cheese lover looking to indulge in something special!
PREP TIME: 5 MINS COOK TIME: 15 MINS TOTAL TIME: 20 MINS
Ingredients
- 2 1/2 cups milk
- 2 cups dry pasta
- 2 tablespoons butter
- 6 ounces Cambozola cheese, diced
- 1/4 cup grated Parmesan
- 2 cups spinach
- Pepper, to taste
Instructions
In a medium pot, bring the milk and pasta to a boil. Reduce and let simmer until pasta is cooked, stirring occasionally. You may need to add more milk if you are using a thick pasta.
Once the pasta has cooked to al dente, add the butter, Cambozola, and Parmesan. Stir until melted. Add more milk if you prefer a runnier mac and cheese.
Stir in spinach until wilted. Sprinkle with black pepper.
