Teriyaki Salmon Bowl

Ingredients
- 1 pound salmon, skinned and diced
- 1/2 cup teriyaki sauce
- 1/2 teaspoon olive oil
- 4 servings rice
- 1/2 English cucumber, julienned
- 1 cup shredded carrots, blanched
- 1 cup edamame
- 2 avocados, diced
- 2 scallions, sliced
- 1 teaspoon sesame seeds
- Chili crisp, optional
Instructions
In a small bowl, combine the salmon and teriyaki sauce. Marinate for at least 30 minutes.
While the salmon is marinating, cook rice according to package directions.
In a medium pan, heat the olive oil and cook salmon until it reaches 145°F, about 10-15 minutes.
While the salmon is cooking, prep the cucumber, carrots, edamame, avocados, and scallions.
Once the rice is done, divide into four bowls. Top with salmon, cucumber, carrots, edamame, avocado, scallions, sesame seeds, and chili crisp.
