Chris's Coconut Lemongrass Chicken Noodle Soup
My boyfriend woke up today and decided he was going to make soup. If you know me, you know that I love soups, so naturally, I was very excited for this. I'd like to note that this is one of his first soup endeavors, so anything could happen. The result - a rich coconut lemongrass chicken noodle soup that's the perfect combination of sweet and savory, with hints of lemongrass.
PREP TIME: 5 MINS COOK TIME: 10 MINS TOTAL TIME: 15 MINS
Ingredients
4 cups water
4 teaspoons Hue Style Beef Flavored Broth Base
1 chicken breast, thinly sliced
1 13.66-ounce can coconut milk
3 ounces egg noodles
Ground black pepper, to taste
Scallions, to garnish
Instructions
In a medium pot, bring the water to a boil.
Add the broth base and chicken. Lower heat and let simmer for about 5 minutes.
Add the coconut milk and noodles. Stir to combine and let simmer for another 5 minutes, or until the chicken is cooked through.
Add pepper to taste.
Garnish with scallions and serve.
