My boyfriend woke up today and decided he was going to make soup. If you know me, you know that I love soups, so naturally, I was very excited for this. I'd like to note that this is one of his first soup endeavors, so anything could happen. The result - a rich coconut lemongrass chicken noodle soup that's the perfect combination of sweet and savory, with hints of lemongrass.

PREP TIME: 5 MINS COOK TIME: 10 MINS TOTAL TIME: 15 MINS

Ingredients

  • 4 cups water

  • 4 teaspoons Hue Style Beef Flavored Broth Base

  • 1 chicken breast, thinly sliced

  • 1 13.66-ounce can coconut milk

  • 3 ounces egg noodles

  • Ground black pepper, to taste

  • Scallions, to garnish

Instructions

  1. In a medium pot, bring the water to a boil.

  2. Add the broth base and chicken. Lower heat and let simmer for about 5 minutes.

  3. Add the coconut milk and noodles. Stir to combine and let simmer for another 5 minutes, or until the chicken is cooked through.

  4. Add pepper to taste.

  5. Garnish with scallions and serve.
