Vietnamese Lemongrass Pork Chops (Thit Heo Xa)
Lemongrass pork chops are a fundamental dish in many Vietnamese restaurants. Lemongrass is a great herb to marinate meats with. It gives the meat a hint of lemon and mint. This particular recipe tastes like you spent hours, but in reality, you only have about 10 minutes of active preparation. If you have the time and are able to do so, I highly recommend prepping the pork chops the night before you intend to make them. I like to serve these over a bed of vermicelli and cucumbers, with soy sauce, and garnished with scallions, but these chops are just as yummy all on their own!

Ingredients
2 lbs pork chops
For the marinade
1/2 cup finely chopped lemongrass
1/2 cup white sugar
1/2 cup fish sauce
1/4 cup water
1 teaspoon minced garlic
Instructions
In a large container, combine the marinade ingredients.
Add the pork chops. Cover the pork chops with the marinade and let marinate overnight.
Grill on medium-high heat until cooked through and serve.
Notes
If you do not have access to a grill, you can broil the pork chops on HIGH until they are cooked through.
