Creamy Cilantro Lime Chicken Pasta
Cilantro and lime is a classic duo that I personally just can't get enough of. This creamy cilantro lime chicken pasta is extremely easy to make and requires minimal preparation. All you need is aromatic cilantro, fresh lime juice, and garlic to bring out the flavors of the chicken.
PREP TIME: 5 MINS COOK TIME: 25 MINS TOTAL TIME: 30 MINS
Ingredients
8 ounces pasta
2 boneless, skinless chicken breasts, sliced crosswise
1 lime, juiced
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon onion powder
1 teaspoon garlic powder
For the sauce
1 tablespoon butter
1 tablespoon olive oil
1/4 cup yellow onion, diced
1 roasted bell pepper, chopped
1 tablespoon garlic, minced
1 cup chicken broth
1/2 cup half-and-half
1 lime, juiced
1 and 1/2 tablespoon Italian seasoning
3 tablespoon cilantro, chopped
Instructions
Cook the pasta according to package directions. Set aside.
Season the chicken with lime juice, salt, pepper, onion powder, and garlic powder.
In a large pan, add the butter and olive oil over medium-high heat.
Once the butter has melted, add the chicken. Fry until each piece is golden, about 3-4 minutes. Set aside.
In the same pan, add the onion and roasted red pepper. Fry until the onion is tender, about 3-4 minutes.
Add the garlic, chicken broth, and half-and-half, and let simmer for 10 minutes to thicken.
Once the sauce has thickened, add the lime juice, Italian seasoning, cilantro, and pasta. Stir to combine.
Add the chicken to warm.
Notes
If the sauce is not thick enough, you can mix 1 teaspoon of cornstarch and 1 tablespoon of water and slowly mix it into the sauce until the consistency is as desired.
