Creamy Slow Cooker Broccoli Cheddar Soup

Ingredients
4 cups broccoli florets, cut into bite sized pieces
1/2 yellow onion, diced
2 cups carrots, julienned
4 cups vegetable stock
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon nutmeg
3 tablespoons butter
1/3 cup all-purpose flour
1 cup half and half
2 cups shredded cheddar cheese
Instructions
Add the broccolI, onion, carrots, stock, salt, pepper, and nutmeg to the slow cooker. Cook on LOW for four hours.
Turn the slow cooker to HIGH.
In a small saucepan, melt the butter. Slowly whisk in flour. Slowly whisk in one cup soup from the slow cooker. Slowly whisk in half and half.
Add the mixture to the slow cooker, stirring to combine.
Slowly add in cheddar cheese, working in small batches to ensure cheese melts evenly.
Serve once all cheese has melted.
