If you’re wondering what’s on the menu tonight, my baked lemon rosemary chicken is always a good option. Marinated in fresh lemon juice and aromatic herbs and then quickly baked to perfection, this baked lemon rosemary chicken is sure to be a winner at the dinner table.

Ingredients

  • 2 skinless, boneless chicken breasts, sliced crosswise

  • 1/4 cup olive oil

  • 1/4 cup lemon juice

  • 1 tablespoon fresh or dried rosemary

  • 2 cloves garlic, minced

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

Instructions

  1. In a medium container, combine all ingredients. Place in refrigerator and marinate for at least 2 hours.

  2. Preheat oven to 400° F.

  3. Line a baking pan with parchment paper and place chicken on paper.

  4. Place in oven and bake for about 15 minutes, or until chicken is fully cooked through.
