Garlic Tomato Confit and Burrata Toast

Now that tomato season is upon us, prepare for yummy tomato ideas! This garlic tomato confit and burrata toast is the perfect lazy day brunch or midday treat - your taste buds will thank you!

SERVES: 1-2
PREP TIME: 10 MINS COOK TIME: 40 MINS TOTAL TIME: 50 MINS

Ingredients

  • 2 slices of bread
  • 1 cup cherry tomatoes
  • 6 cloves garlic
  • 1/4 cups olive oil
  • 1/4 teaspoon oregano
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 8 ounces burrata
  • 2 slices prosciutto
  • Salt, to taste
  • Pepper, to taste
  • Balsamic glaze
  • Basil, to garnish

Instructions

  1. Preheat oven to 350°F.

  2. In a baking dish, combine the tomatoes, garlic, oil, and spices. Mix together with a spoon.

  3. Roast for 40-45 minutes until tomatoes and garlic are softened.

  4. Divide and spread the roasted garlic over each slice of bread.

  5. Top with burrata, roasted tomatoes, prosciutto, salt, pepper, balsamic glaze, and basil.

  6. Enjoy!
