Grilled Jerk Salmon Tacos with Mango Tomato Slaw
Grilled jerk salmon tacos - smoky, spicy jerk salmon topped with refreshing mango slaw!

Ingredients
- 1 pound salmon
- 1-2 tablespoons jerk seasoning
- 1 pint cherry tomatoes, halved
- 1 mango, diced
- 1 scallion, sliced
- Tortillas
- Chipotle sauce
Instructions
Preheat grill to 425°F.
Generously season salmon with jerk seasoning.
Place salmon on grill skin side up and cook 3-5 minutes until it releases from the grates. Then flip it over and cook for another 2-3 until internal temperature reaches 145°F.
While the salmon is cooking, make the mango tomato slaw by combining the tomatoes, mangoes, and scallions in a bowl.
To assemble the tacos, top a tortilla with some salmon and mango tomato slaw.
Drizzle with chipotle sauce and enjoy!
