Jerk Salmon Tacos

These jerk salmon tacos are all about flavor, not the heat! Topped with crushed pineapple, crisp slaw, and a zesty chipotle sauce, they're a perfect balance of sweet and tangy.

PREP TIME: 10 MINS COOK TIME: 20 MINS TOTAL TIME: 30 MINS

Ingredients

  • 1 pound salmon
  • 1 teaspoon olive oil
  • 2-3 tablespoons jerk seasoning
  • 2 cups coleslaw
  • 2 cups crushed pineapple
  • 1/4 red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • Chipotle sauce
  • Lime wedges
  • 8 small tortillas

Instructions

  1. Preheat oven to 425°F.

  2. Season salmon with olive oil and jerk seasoning.

  3. Bake for 20-25 minutes, until salmon reaches 145°F.

  4. Top each tortilla with salmon, coleslaw, pineapple, onion, cilantro, chipotle sauce, and lime.

  5. Enjoy!
