Leftover Pulled Pork Quesadillas

Leftover pulled pork quesadillas are the perfect solution for turning yesterday's meal into today's culinary delight. You really can't go wrong with tender pulled pork nestled between layers of gooey cheese and crispy tortillas.

PREP TIME: 5 MINS COOK TIME: 20 MINS TOTAL TIME: 25 MINS
## **Ingredients**
  • Cooking spray
  • 2 large flour tortillas
  • 1 cup shredded mozzarella, divided
  • 1/2 cup shredded cheddar, divided
  • 2 cups leftover pulled pork

Instructions

  1. Heat a large pan over medium-low heat. Lightly spray with cooking spray and place a tortilla on the pan.

  2. Layer 1/4 cup of mozzarella, 1/4 cup cheddar, 1 cup pulled pork, 1/4 cup mozzarella, and 1/4 cup cheddar on one half of the tortilla.

  3. Fold the tortilla in half and lightly press with a spatula.

  4. Cook for 7-8 minutes until the bottom is golden brown. Flip the tortilla over to the other side and cook for another 2-3 minutes.

  5. Repeat above steps with remaining tortilla.

  6. Cut each quesadilla into 4 equal wedges.

  7. Enjoy!
