Leftover Steak, Bell Pepper, Egg & Cheese Breakfast Burrito

These breakfast burritos are stuffed with melty cheese, fluffy scrambled eggs, fresh bell peppers and onions, and leftover steak.

Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 cup onion, diced
- 1/2 bell pepper, diced
- 2 eggs
- Salt, to taste
- Pepper, to taste
- 1/2 pound leftover steak, thinly sliced
- 1/2 cup shredded mozzarella, divided
- 1/2 cup shredded cheddar, divided
- 4 tablespoons salsa, divided
- 2 tortillas
Instructions
In a small bowl, whisk the eggs. Set aside.
In a medium pan, heat the oil. Add garlic and stir fry until fragrant, about 1 minute.
Add onion and bell pepper. Stir fry until onion is translucent, about 3 minutes.
Add eggs. Season with salt and pepper. Cook until eggs are fluffy and set.
Assemble the breakfast burritos by layering 1/4 cup mozzarella, 1/4 cup cheddar, 2 tablespoons salsa, half the scrambled eggs, and half the steak on each tortilla,
Roll up the tortillas tightly, tucking in the sides as you go.
Place the tortillas on a skillet until lightly golden and crispy.
