Leftover Steak, Bell Pepper, Egg & Cheese Breakfast Burrito

Breakfast burritos are the perfect way to transform leftovers into a hearty and satisfying breakfast. Plus, they're versatile and easy to customize with your favorite ingredients. These breakfast burritos are stuffed with melty cheese, fluffy scrambled eggs, fresh bell peppers and onions, and leftover steak.

PREP TIME: 10 MINS COOK TIME: 15 MINS TOTAL TIME: 25 MINS

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup onion, diced
  • 1/2 bell pepper, diced
  • 2 eggs
  • Salt, to taste
  • Pepper, to taste
  • 1/2 pound leftover steak, thinly sliced
  • 1/2 cup shredded mozzarella, divided
  • 1/2 cup shredded cheddar, divided
  • 4 tablespoons salsa, divided
  • 2 tortillas

Instructions

  1. In a small bowl, whisk the eggs. Set aside.

  2. In a medium pan, heat the oil. Add garlic and stir fry until fragrant, about 1 minute.

  3. Add onion and bell pepper. Stir fry until onion is translucent, about 3 minutes.

  4. Add eggs. Season with salt and pepper. Cook until eggs are fluffy and set.

  5. Assemble the breakfast burritos by layering 1/4 cup mozzarella, 1/4 cup cheddar, 2 tablespoons salsa, half the scrambled eggs, and half the steak on each tortilla,

  6. Roll up the tortillas tightly, tucking in the sides as you go.

  7. Place the tortillas on a skillet until lightly golden and crispy.

  8. Enjoy!
