Lemon Orzo with Parmesan and Peas

Orzo is good in soups but is also great for serving instead of rice or as a side dish. This lemon orzo with Parmesan and peas recipe is the perfect combination of lemony Parmesan goodness and can be paired with your favorite meat or veggie to create a meal or served all on its own.

Ingredients

  • 1 cup orzo

  • 1/2 tablespoon vegetable oil

  • 1/4 teaspoon garlic powder

  • 2 cups chicken broth

  • 1/2 teaspoon thyme leaves

  • 1 tablespoon lemon juice

  • 1 cup frozen peas

  • Parmesan cheese, to garnish

  • Pepper, to garnish

Instructions

  1. Add the orzo, vegetable oil, garlic powder, chicken broth, thyme leaves, lemon juice, and peas to a medium pan.

  2. Bring to a boil.

  3. Once the broth comes to a boil, continue to cook on low for the duration of time specified on orzo packaging, or until no broth remains. Stir occasionally.

  4. Garnish with Parmesan cheese and pepper and serve.
