Mint and Basil Chicken Stir Fry (Ga Xao Rau Thom)

This mint and basil chicken stir fry smells so good and is so easy to make that it's sure to be a delight at your dinner table. It's made with classic Vietnamese ingredients: savory fish sauce, fresh mint, and fragrant basil.

Ingredients

  • 2 boneless, skinless chicken thighs, diced
  • 1 teaspoon cornstarch
  • Oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 Thai bird's eye chili, sliced (optional)
  • 1 tablespoon soy sauce
  • 2 teaspoons oyster sauce
  • 1 tablespoon fish sauce
  • 1/2 teaspoon sugar
  • 1 cup mint leaves
  • 1 cup Thai basil leaves

Instructions

  1. In a medium bowl, toss the chicken with the cornstarch and 1 teaspoon oil.

  2. In a medium skillet, heat 1 tablespoon oil. Add chicken and stir fry until opaque. Remove from skillet. Set aside.

  3. In the same skillet, heat another 1 tablespoon oil. Add garlic, onion, and chili. Stir fry until fragrant, about 1 minute.

  4. Add the chicken back to the skillet. Add remaining ingredients. Stir fry until mint and basil leaves are wilted.

  5. Serve with rice.
