Mizeria (Polish Cucumber Salad)

This take on mizeria may not be perfectly true to its Polish roots, but my Polish boyfriend certainly approves! Made with crunchy, refreshing cucumbers and creamy sour cream, this cucumber salad is the perfect way to cool off and enjoy those last days of summer.

Ingredients

  • 1/2 cup sour cream

  • 1 tablespoon lemon juice

  • 1 tablespoon fresh dill

  • 1 teaspoon sugar

  • 1 teaspoon salt

  • 1/4 teaspoon garlic powder

  • 3 cups cucumbers, thinly sliced and peeled

  • 1 cup red onion, thinly sliced

Instructions

  1. In a medium bowl, combine sour cream, lemon juice, dill, sugar, salt and garlic.

  2. Add cucumbers and onion. Stir to combine.

  3. Refrigerate at least 2 hours before serving.
