Saucy Stir Fried Chicken and Noodles (Hu Tieu Xao)

These saucy stir fried chicken and noodles are made with quick-cooking wide rice noodles in a sweet, savory, and spicy sauce. Feel free to add any veggies you might have on hand - they’ll soak up all the yummy sauce and become really addictive!

Ingredients

  • 7 ounces dried rice noodles
  • 2 tablespoons oil
  • 3 cloves garlic, minced
  • 2 bird’s eye chili, sliced (optional)
  • 1/2 onion, sliced
  • 2 boneless, skinless chicken breasts
  • 2 teaspoons fish sauce
  • 2 scallions, cut into 1 inch pieces
  • 1 cup bean sprouts
  • 1 cup Thai basil

For the sauce

  • 3 tablespoons oyster sauce
  • 3 tablespoons soy sauce
  • 2 teaspoons sugar
  • 1 tablespoon water

Instructions

  1. Cook noodles according to package directions.

  2. In a small bowl, add the sauce ingredients and mix until well combined.

  3. In a large pan, heat the oil. Add garlic and chili and stir fry until fragrant, about 30 seconds.

  4. Add onion. Stir fry for 1 minute.

  5. Add chicken and fish sauce. Stir fry until chicken is cooked through, about 2 minutes.

  6. Add scallions, bean sprouts, noodles, and sauce. Mix until noodles are evenly coated.

  7. Remove from heat. Add basil and toss until the basil is wilted.

  8. Serve.
