Saucy Stir Fried Chicken and Noodles (Hu Tieu Xao)
These saucy stir fried chicken and noodles are made with quick-cooking wide rice noodles in a sweet, savory, and spicy sauce. Feel free to add any veggies you might have on hand - they’ll soak up all the yummy sauce and become really addictive!

Ingredients
- 7 ounces dried rice noodles
- 2 tablespoons oil
- 3 cloves garlic, minced
- 2 bird’s eye chili, sliced (optional)
- 1/2 onion, sliced
- 2 boneless, skinless chicken breasts
- 2 teaspoons fish sauce
- 2 scallions, cut into 1 inch pieces
- 1 cup bean sprouts
- 1 cup Thai basil
For the sauce
- 3 tablespoons oyster sauce
- 3 tablespoons soy sauce
- 2 teaspoons sugar
- 1 tablespoon water
Instructions
Cook noodles according to package directions.
In a small bowl, add the sauce ingredients and mix until well combined.
In a large pan, heat the oil. Add garlic and chili and stir fry until fragrant, about 30 seconds.
Add onion. Stir fry for 1 minute.
Add chicken and fish sauce. Stir fry until chicken is cooked through, about 2 minutes.
Add scallions, bean sprouts, noodles, and sauce. Mix until noodles are evenly coated.
Remove from heat. Add basil and toss until the basil is wilted.
Serve.
