Bean Salad
This vibrant bean salad brings together crisp green beans, hearty red beans, and creamy garbanzo beans, tossed in a light vinaigrette. It’s a simple, refreshing dish packed with flavor and texture!

Ingredients
- 1 pound green beans, blanched and cut into 1 inch pieces
- 1 15-ounce can red beans
- 1 15-ounce can garbanzo beans
- 1 shallot, diced
- 2 stalks celery, diced
- 1 cup parsley, chopped
- 1/4 teaspoon dried rosemary
For the dressing
- 3 tablespoons oil
- 1/3 cup apple cider vinegar
- 1/4 cup sugar
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
Instructions
In a small bowl, whisk together the dressing ingredients.
In a medium bowl, combine the green beans, red beans, garbanzo beans, shallot, celery, parsley, and rosemary.
Add the dressing. Toss until evenly mixed.
Chill until ready to serve.
