This vibrant bean salad brings together crisp green beans, hearty red beans, and creamy garbanzo beans, tossed in a light vinaigrette. It’s a simple, refreshing dish packed with flavor and texture!

Ingredients

  • 1 pound green beans, blanched and cut into 1 inch pieces
  • 1 15-ounce can red beans
  • 1 15-ounce can garbanzo beans
  • 1 shallot, diced
  • 2 stalks celery, diced
  • 1 cup parsley, chopped
  • 1/4 teaspoon dried rosemary

For the dressing

  • 3 tablespoons oil
  • 1/3 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper

Instructions

  1. In a small bowl, whisk together the dressing ingredients.

  2. In a medium bowl, combine the green beans, red beans, garbanzo beans, shallot, celery, parsley, and rosemary.

  3. Add the dressing. Toss until evenly mixed.

  4. Chill until ready to serve.

  5. Enjoy!
