Cajun Salmon Lemon Alfredo Pasta

Creamy Alfredo sauce meets Cajun-spiced salmon and zesty lemon in my Cajun Salmon Lemon Alfredo Pasta, all tossed together for the ultimate dinner mash-up. It’s bold, it’s creamy, and it’s a tasty twist on a weeknight favorite!

Ingredients

  • 8 ounces pasta
  • 1 pound salmon, cut into bite size pieces
  • Salt, to taste
  • Pepper, to taste
  • 1-2 tablespoons Cajun seasoning
  • 1 teaspoon olive oil
  • 6 ounces spinach

For the sauce

  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1 cup Parmesan, grated
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 wedge lemon

Instructions

  1. Cook pasta according to package directions.

  2. While the pasta is cooking, season the salmon with salt, pepper, and Cajun seasoning.

  3. In a medium pan over medium-high heat, heat the oil. Cook the salmon bites for about 2-3 minutes per side. They cook fast, so keep an eye on them! Once cooked, set aside.

  4. In the same pan, melt the butter and add garlic. Cook until fragrant, about 1 minute.

  5. Slowly whisk in heavy cream. Bring to a simmer.

  6. Slowly whisk in Parmesan, pepper, garlic powder, and onion powder. Continue whisking until sauce has thickened slightly, about 5 minutes.

  7. Squeeze the lemon wedge into the sauce and stir well.

  8. Add spinach and cook until wilted.

  9. Add pasta and toss to coat.

  10. Divide pasta into 4 bowls. Top with salmon.

  11. Enjoy!
