PREP TIME: 10 MINS COOK TIME: 20 MINS TOTAL TIME: 30 MINS
Ingredients
- 8 ounces pasta
- 1 pound salmon, cut into bite size pieces
- Salt, to taste
- Pepper, to taste
- 1-2 tablespoons Cajun seasoning
- 1 teaspoon olive oil
- 6 ounces spinach
For the sauce
- 4 tablespoons butter
- 6 cloves garlic, minced
- 2 cups heavy whipping cream
- 1 cup Parmesan, grated
- 2 teaspoons black pepper
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 wedge lemon
Instructions
Cook pasta according to package directions.
While the pasta is cooking, season the salmon with salt, pepper, and Cajun seasoning.
In a medium pan over medium-high heat, heat the oil. Cook the salmon bites for about 2-3 minutes per side. They cook fast, so keep an eye on them! Once cooked, set aside.
In the same pan, melt the butter and add garlic. Cook until fragrant, about 1 minute.
Slowly whisk in heavy cream. Bring to a simmer.
Slowly whisk in Parmesan, pepper, garlic powder, and onion powder. Continue whisking until sauce has thickened slightly, about 5 minutes.
Squeeze the lemon wedge into the sauce and stir well.
Add spinach and cook until wilted.
Add pasta and toss to coat.
Divide pasta into 4 bowls. Top with salmon.
Enjoy!
