Creamy Tomato Soup

Coming in hot with a classic and delicious creamy tomato soup! If creamy isn’t your thing, try my husband’s cream-free tomato soup. Just don’t forget the grilled cheese!

PREP TIME: 10 MINS COOK TIME: 20 MINS TOTAL TIME: 25 MINS

Ingredients

  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound campari tomatoes
  • 6 tablespoons tomato paste
  • 1 cup chicken stock
  • 1 tablespoon honey
  • 1/2 tablespoon dried basil
  • 1/2 teaspoon black pepper
  • 1/4 cup heavy cream
  • 1/8 cup Parmesan, freshly grated

Instructions

  1. In a medium pot, melt the butter. Add onion and stir fry until softened, about 10 minutes.

  2. Add garlic and stir fry until fragrant, about 1 minute.

  3. Add tomatoes, tomato paste, chicken stock, honey, basil, and black pepper. Bring to a boil. Once boiling, reduce heat, cover, and let simmer for 10 minutes.

  4. Blend using an immersion blender.

  5. Slowly stir in heavy cream and Parmesan.

  6. Ladle into bowls and enjoy!
