Creamy Tomato Soup
Coming in hot with a classic and delicious creamy tomato soup! If creamy isn’t your thing, try my husband’s cream-free tomato soup. Just don’t forget the grilled cheese!

Ingredients
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 pound campari tomatoes
- 6 tablespoons tomato paste
- 1 cup chicken stock
- 1 tablespoon honey
- 1/2 tablespoon dried basil
- 1/2 teaspoon black pepper
- 1/4 cup heavy cream
- 1/8 cup Parmesan, freshly grated
Instructions
In a medium pot, melt the butter. Add onion and stir fry until softened, about 10 minutes.
Add garlic and stir fry until fragrant, about 1 minute.
Add tomatoes, tomato paste, chicken stock, honey, basil, and black pepper. Bring to a boil. Once boiling, reduce heat, cover, and let simmer for 10 minutes.
Blend using an immersion blender.
Slowly stir in heavy cream and Parmesan.
Ladle into bowls and enjoy!
