Kimchi Chicken Ramen
If you have some noodles lying around, you’re going to want to try this one. The acidic, spicy tang of kimchi is the star of this soup and is perfectly rounded out by earthy mushroom and rich chicken broth.

Ingredients
- 2 servings ramen noodles
- 1 tablespoon oil
- 1 chicken breast, thinly sliced
- 1/2 cup sliced mushrooms
- 1 cup kimchi
- 1/2 cup kimchi juice
- 4 cups chicken broth
- 2 teaspoons red pepper flakes
- 1/2 teaspoon sugar
- 2 teaspoons sesame oil
- 2 scallions, thinly sliced
Instructions
In a medium pot, heat the oil and stir fry the chicken breast until almost fully cooked.
Add the mushrooms. Stir fry for about 3 minutes.
Add the kimchi. Stir fry for about 1 minute.
Add the kimchi juice, chicken broth, red pepper flakes, sugar, and sesame oil. Bring to a boil and then let simmer for 5 minutes. In the meantime, cook noodles according to package directions.
Drain and divide noodles into two bowls. Pour broth over noodles.
Garnish with scallions and serve!
