Roasted Mushroom and Arugula Pesto Tortilla Pizza
Once you start making these, I promise you’ll become addicted! Store bought tortillas crisp up perfectly when cooked and don’t taste like tortillas, but rather like the perfect thin crust pizza dough. These single serving tortilla pizzas have a salad on top of them with roasted mushrooms, arugula, and parmesan, finished with a spritz of lemon juice.

Ingredients
- 3/4 cups mushrooms
- 1 teaspoon cooking oil
- Salt, to taste
- Pepper, to taste
- 2 tortillas
- 1 tablespoon pesto
- 1/2 cup arugula
- 1/4 cup grated parmesan
- 1/4 lemon
Instructions
Preheat oven to 375°F. In a small bowl, combine the mushrooms, oil, salt, and pepper. Spread the mushrooms on a single layer and roast until golden, about 15 minutes. Remove from oven.
Place 2 tortillas on a large baking sheet.
Spread pesto on each tortilla.
Top each tortilla with arugula and mushrooms.
Place in oven and bake for 3 minutes.
Sprinkle parmesan over each pizza and drizzle with lemon juice.
