Lemon, Asparagus, and Chicken Pasta

This lemon, asparagus, and chicken pasta is perfect for a busy weeknight meal. Made with tender asparagus and juicy chicken, it's a quick and easy dish that is bursting with bright and fresh spring flavors.

Ingredients

  • 1 tablespoon olive oil

  • 2 boneless chicken breasts, diced into 1-inch cubes

  • Salt and pepper, to taste

  • 8 ounces angel hair pasta

  • 1 and 1/2 cups chicken broth

  • 2 garlic cloves, minced

  • 1 bundle asparagus, trimmed and cut into 1-inch pieces

  • 1 lemon, zested and juiced

Instructions

  1. In a medium pan over medium heat, add the olive oil. Add the chicken and season with salt and pepper to taste. Cook until the chicken is opaque, stirring occasionally, about 5 minutes.

  2. Move the chicken to one side of the pan. Add the pasta, garlic, and chicken broth. Stir to combine and bring to a boil.

  3. When the pasta is partially cooked, add the asparagus and lower the heat to a simmer. Let simmer until the asparagus is cooked through, about 4-5 minutes.

  4. Add the lemon zest and lemon juice. Stir to combine

  5. Add salt and pepper to taste, if necessary.

  6. Serve immediately.
