Roasted Italian Potatoes
These Roasted Italian Potatoes are crispy on the outside, tender on the inside, and packed with bold garlic, Parmesan, and herb flavors. Roasted to golden perfection with butter, olive oil, and Italian seasoning, they make the perfect side dish for any meal. Simple ingredients, big flavor—what more could you ask for?

Ingredients
- 1 tablespoon olive oil
- 1 pound baby potatoes, halved
- 6 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon paprika
- 1/3 cup shredded Parmesan cheese
- 1 teaspoon chopped parsley
- 2 tablespoons butter, diced
Instructions
Preheat oven to 400°F.
In an oven safe skillet, heat the oil. Add potatoes and cook until the surface turns crispy. Flip and cook until the skins are browned.
Add the garlic and sauté until fragrant, about 30 seconds. Add the Italian seasoning, salt, and paprika. Stir to combine.
Turn off the heat and top with Parmesan and parsley.
Transfer the skillet to the oven and roast for 15 minutes.
Top with butter.
