Every year, the Thanksgiving feast comes and goes, leaving behind a bounty of leftovers. If you’re like me, the joy of the feast continues long after. One of my favorite ways to transform leftover turkey is into delicious turkey pot pies. Some years I have time to make my own pie crust from scratch but others are just so hectic and store-bought pie crusts save the day.
This Mediterranean inspired chicken is super easy and tasty. It’s one of those recipes where I tossed some spices together one night and have been tweaking the recipe ever since. My favorite part about this chicken is that it’s so versatile - use it in a salad, in a wrap, or in a bowl! I like turning it into a grain bowl with curried couscous, tomatoes, lettuce, tahini dressing, and a spritz of fresh lemon juice.
One of my favorite dishes growing up was this Vietnamese chicken salad (gổi gà). My mom would serve this either alone or with rice porridge drizzled with ginger fish sauce (mắm gừng).
