If you have some noodles lying around, you’re going to want to try this one. The acidic, spicy tang of kimchi is the star of this soup and is perfectly rounded out by earthy mushroom and rich chicken broth.
Once you start making these, I promise you’ll become addicted! Store bought tortillas crisp up perfectly when cooked and don’t taste like tortillas, but rather like the perfect thin crust pizza dough. These single serving tortilla pizzas have a salad on top of them with roasted mushrooms, arugula, and parmesan, finished with a spritz of lemon juice.

Vietnamese chicken curry (cà ri gà) is a dish that I grew up eating as a child. It’s a bowl of cozy comfort packed with curry and lemongrass flavors. I could eat bowls and bowls of this with LOTS of freshly toasted baguette slices for dipping.

The sauce is made with garlic, onions, chicken broth, cream, and of course, pumpkin purée. For an extra kick, I added a bit of Weber Kick’n Chicken Seasoning.
